Mushroom Risotto

Risotto is the classic rice dish of Italy. It's very creamy, as it's made with broth, white wine, and lots of Parmesan cheese. The rice that is used is typically Arborio, which produces a very delicate and creamy textured dish, unlike common white or brown rice. The base risotto is often mixed with an extra ingredient, in this case mushroom. The mushrooms are sautéed separately in a pan with garlic, shallots, and spices and then added into the risotto shortly before the dish is plated.

Eggplant Parmigiana

This is a really popular dish, and not just with vegetarians. It's a delicious dish made by slicing eggplant, breading it, and frying it until crisp. The eggplant is then placed into a baking dish and covered with shredded mozzarella cheese and marina sauce. The dish can be served on a plate, or you can order it in a hero.

Penne Arrabiata

This pasta dish is just the thing for fans of spicy food. While you might not think of Italian food as being spicy, this dish will chance your mind. The word Arrabiata means angry in Italian, and this refers to the spiciness or the peppers used. Dried red peppers are left to marinate in olive oil, and then garlic and tomatoes are added to the oil and warmed up. This is then used as the sauce for the penna pasta. It is covered with a generous dusting of a hard cheese (something along the lines of Pecorino romano).
